Waffles tend to be soft and moist for us - so it's no wonder these yogurt waffles really hit the spot! Ok, actually, we love all, all, all alternatives 😉 . But these waffles with yogurt, oil and sparkling water are something special. Maybe they are also perfect for you?
Ingredients
The yogurt waffle batter is a mixture of my classic recipe and a recipe with curd. Of course, the foundation is a simple cake batter, as you know it from cakes. Eggs, sugar, flour, fat, yogurt and raising agent: That's all you need. Since these common ingredients are usually in stock anyway, the soft waffles with yogurt can definitely be a spontaneous last-minute recipe. But yogurt waffles are much more than a quick emergency solution: a delicious dessert for all times of the day, from breakfast to dinner. We eat them just dusted with powdered sugar, sometimes with compote, fresh fruit and sometimes with a scoop of ice cream or some chocolate sauce.
How to make the Yogurt Waffles
Let's begin by separating the eggs carefully. Beat the egg whites with a pinch of salt until they are stiff and set them aside. Beat the sugar with the oil for a few minutes until light and fluffy, then add the egg yolks.
Now, mix flour with baking powder and baking soda. Stir into the egg cream with the yogurt. Then carefully stir in the sparkling water and fold in the beaten egg whites. Use as much water as needed until the dough is a bit runnier than regular cake batter. After that, preheat the waffle iron and grease it. Using a ladle, put some dough into the center, close the iron and bake until it's easy to open again. You will get 9 to 12 waffles, depending on thickness.
Top Tip
To get delicious waffles with yogurt and oil, you should pay attention to the following: The eggs are separated, i.e., stiffly beaten egg whites are added to the dough. This makes the outcome particularly airy. In addition, the yogurt waffles contain sparkling water with (a lot of) carbonic acid, which is only stirred in carefully so that the air escapes as little as possible.

- 120 grams (⅔ cup) sunflower oil, or coconut oil
- 120 grams (⅔ cup) sugar, quantity to taste
- 300 grams (1 ⅕ cups) vanilla yogurt, or natural
- 300 grams (2 ⅖ cups) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 130 milliliters (⅔ cup) sparkling mineral water, rough estimate

Notes
- The amount of sugar is only a rough indication. Whether you use already sweetened (vanilla) yogurt or an unsweetened natural variety, you may need a little more or less.
- It should be whole milk yogurt or Greek yogurt, no low-fat alternative.
Ingredient substitutions
Variations
I usually use vanilla yogurt for this recipe, but you can easily use other types like natural, lemon, cherry or similar flavors. Depending on how heavily sweetened these already are, you may need a little less or more sugar. Suitable fat in the yogurt waffles with oil and mineral water is sunflower oil, canola oil or coconut oil. If you prefer baking with butter, take about 150 grams.
