Sure, you shouldn't compare this recipe to double chocolate muffins from the coffee shop. Even of you don't need eggs, butter, oil, margarine, sugar, dried fruits or sugar substitutes for the banana oatmeal muffins, they taste delicious nevertheless! And they are even suitable for toddlers with allergies. Unfortunately, some kids have problems with eggs and dairy products, especially at the beginning of their lives. As soon as they reach the age of complementary feeding, you can give sugar-free muffins to babies. But please do not eat them all yourself when testing…!
You need overripe fruit for the banana muffins, best with brown spots. With overripe bananas, the cakes will be pretty but subtly sweet. I like adding cinnamon, vanilla and some lemon juice. Since not only sugar but fat in any form is missing, the consistency of the low-calorie muffins is a bit different than you may expect. They will not be fluffy or airy, but moist.
How to make the Vegan Banana Oatmeal Muffins
Let's dive right into this very easy recipe: First of all, preheat the oven to 360°F/180°C. Mash the very ripe bananas into purée. Now, stir in the oat milk first, then the remaining ingredients vigorously, but not too long.
In the end, pour the dough into muffin cups (preferably made of silicone, in paper cups, the muffins may stick) and bake your muffins for about 20 minutes. Enjoy!
Top Tip
The healthy muffins for babies and children can be prepared excellently and frozen. Of course, you can refine the banana oat muffins - for example, with raisins, chopped dried apricots or dates, and for adults, with chopped nuts or almonds. Or chocolate drops 😉 .

- 120 milliliters (8 tablespoons) oat milk
- 120 grams (1 cups) spelt flour
- 80 grams (⅓ cup) oatmeal, tender
- 2 teaspoons baking powder

- 1 teaspoon lemon juice
- 1 piece vanilla pulp, scraped out pulp of a pod (optional)

Because as it turns out, my healthy baking recipes for kids hit the spot and many adults love them, too 😉 . For example, the apple carrot cake, the vegan oatmeal cookies or the vegan banana cake. All of them contain really good ingredients. Of course, since the muffins are made with bananas, they are not sugar-free in the strict sense.
