Ingredients
You only need absolute basics like sugar, flour, oil, and, of course, fruit. The recipe is a mix between the classic apple pie from the baking sheet and the vegan lemon pie. I baked the apple pie from the baking sheet vegan with oil (instead of margarine or similar). Here you should make sure that the oil tastes neutral.
If the apple sheet cake has to be vegan, eggs, which usually result in the fluffy dough, are omitted. Instead, I put carbonated water, baking soda, and acid in form of lemon juice. Cow's milk and butter can be replaced easily anyway.
How to make the Vegan Apple Pie
At first, peel and core the apples and cut them into pieces or wedges. Mix them in a bowl with the lemon juice. Preheat the oven to 360°F / 180°C. Cover a baking sheet (approx. 16.5*14.5 in / 42*37 cm) with baking paper. Whisk the sugar and oil for 2-3 minutes. Stir in the milk. Mix flour, starch or pudding powder, baking powder, baking soda, cinnamon, and salt. Stir the sugar-oil-milk mixture together or alternately with the sparkling water and lemon juice as briefly as possible.
Now, pour the dough onto the baking sheet and smooth it out. Top with apple slices or pieces and press them lightly into the dough. Sprinkle with almond flakes. After this, bake the cake for 30-35 minutes, depending on height, and test it with a stick to see if it is done. Let cool and dust with powdered sugar in the end, if desired.
Top Tip
Vegan pastries sometimes have the slight disadvantage of looking quite pale. You can avoid this by replacing some flour with vanilla pudding powder. Brings a subtle great vanilla note to the vegan apple pie from the baking sheet 🙂 . For appearance and taste, also add some cinnamon and sliced almonds.

Variations
For the success of the vegan apple sheet cake, you must not over-stir the dough and do not spread acid or baking soda.
