As soon as the first ripe fruits are here, such a delicious strawberry cake with pudding is simply the best way to get in the mood for spring. With a luscious layer of ripe, red and aromatic berries. One bite - and your spirits are guaranteed to soar!

Taste and Occasion
The strawberry cake recipe I'm sharing with you in this post is, admittedly, anything but extraordinary. It's a true classic (just like grandma's cherry pie with sprinkles). But sometimes the most uncomplicated things are the best anyway, right?
Just like the strawberry sheet cake, which makes either a whole children's birthday party happy, the open-plan office with the nice colleagues or the particularly hungry little children (little joke… but with a big spark of truth).
Ingredients
The strawberry pudding cake is so plain and simple that it needs almost no instructions. An ordinary sponge cake base is followed by a layer of custard - which is really just milk, minimal sugar and custard powder - and a topping of lots of strawberries along with cake frosting. That's it. So far, so delicious.
At the bakery you have to pay for such a strawberry slice for sure 2-3 euros. And then you might get a piece of strawberry cake that tastes more like sugar than fruit. As actually almost always is self-baking the better choice 😉 .
And the nice thing is that you can make the strawberry cake with pudding a little differently every time. As written, my version is pretty basic, at least except for the pistachio decoration.
How to Make the Strawberry Pudding Cake
Hopefully, now you all got a taste for the simple strawberry cake with vanilla pudding 🙂 . Best start preparing right away, as the sponge cake base needs to cool before topping, and also the pudding tends to be a little too cool than too warm.
For preparation, cover the bottom of a baking tray with baking paper, preheat the oven to 350°F/175°C and cream soft butter with sugar.
Add the eggs one by one and mix everything well. Stir in the flour mixed with the baking powder and salt alternately with the milk. If necessary, add a little more milk until the dough falls from the spoon with difficulty tearing.
Spread the dough evenly on the baking sheet and bake for about 20-25 minutes. Let the cake cool. Meanwhile, cook a pudding according to package directions (but only with 800 ml milk instead of 1 liter milk).
Allow teh pudding to cool, stirring repeatedly to prevent a skin from forming. Alternatively, cover the bowl with plastic wrap.
Place a baking frame around the cake base (especially if the baking tray is very flat). Spread the pudding on it. Wash and clean the strawberries and spread them on the pudding.
Prepare the cake glaze with the sugar according to the package instructions and spread it thinly on the berries with a spoon and/or brush. Sprinkle cake with chopped pistachios and you are done!

Ingredients
- 280 grams (1 ⅓ cups) butter , soft
- 180 grams (1 cup) sugar
- 4 eggs, medium-sized
- 350 grams (3 cups) all-purpose flour
- 17 grams (1 ½ tablespoon) baking powder, 1 small bag
- 1 pinch salt
- 100 milliliters (½ cup) milk
For the topping
- 800 milliliters (3 ½ cups) milk
- 2 sachets vanilla pudding powder , for cooking
- 80 grams (½ cup) sugar
- 1 kilogram (7 cups) strawberries
- 1 packet (1) red cake glaze, for 250 ml of liquid
- 2 tablespoons sugar
For decoration
- 4 tablespoons pistachios, chopped
