In this post, I'll share my easy stick bread recipe, which is nothing more than a regular salty yeast dough. The great thing about it is that you can modify it as you like. If you want to make a savory bread, adding some Mediterranean herbs, grated cheese, and garlic is easy. For sweet bread, cinnamon or vanilla, for example, are suitable. There are alternatives without yeast, such as curd-oil dough, but honestly: It doesn't hit the "original" spot! If you want to have a real "freshly baked bread feeling", use stick bread dough with yeast.
The dough is ready within 10 minutes. You can't get it any faster with store-bought pizza dough. While it is rising, you can start the fire. Also, remove the bark from the sticks, sharpen them, and put them in a bucket of water. If you like, you can read my basic yeast dough recipe, in which I describe all the steps in detail.
How to make the Stick Bread
First of all, crumble the yeast into a cup with half of the lukewarm water-milk mixture. Add the pinch of sugar and then stir with a spoon until the yeast is dissolved. Then, put the flour in a bowl, make a well in the center and add the lukewarm yeast-milk mixture here. Mix with a bit of flour in the hollow. Cover the bowl with a cloth and leave it in a warm place for about 10 minutes.
After this, add flour and salt and knead all ingredients with a food processor or hand mixer for about 5-10 minutes. Cover the bowl with a cloth and let the dough rise in a warm place for 1 to 2 hours. In the meantime, light a fire so that there are embers for baking the bread. Remove the bark from about 1 meter long wooden sticks on one side and sharpen them to a length of about 8 in / 20 cm. Especially if they are not fresh sticks, you should now put them in water (e.g. in a bucket) with the tips downwards until baking.
After the rising time, divide the dough into about eight equal pieces and roll each into a long strand on a floured work surface. Wrap dough rolls around sticks like a cord. Attention: Stick bread should not be too thick. In the end, hold stick bread over embers for about 5-10 minutes (depending on thickness), repeatedly turning, especially toward the end. Do not hold into the open fire. When your stick bread is done: Enjoy!
Top Tip
Whether you make the stick bread with dry or fresh yeast doesn't matter. I prefer fresh yeast, but the dough should rise a little longer with it, which didn't matter to us. Because we drive meanwhile into the forest with our bikes and collect sticks 😉. Already the first highlight.

- ½ cube fresh yeast, or 1 packet dry yeast

In the meantime, baking stick bread has become almost a standard part of celebrations like children's birthday parties. It is simply soooo delicious!
