Taste and Occasion
The hearty carrot quiche with puff pastry tastes both warm and cold. And it is so delicious that our kids could almost become veggie-lovers 😉 . What I particularly like: The basic recipe is suitable for any vegetarian quiche. Fancy a carrot and goat cheese quiche? Just add goat cream cheese to the cream instead of regular. Or feta. Carrots and zucchini also go well. The latter is also less dominant than spring onions. We recently celebrated the beginning of spring with carrot quiche with puff pastry. And harvested our kid's homegrown cress for decoration.

This colorful vegetable quiche is a delicious dinner and a great snack in one. The vegetarian quiche tastes good with (almost) any type of vegetable; herb cream cheese is also suitable instead of fresh goat cheese. For the vegetable quiche recipe, I used puff pastry this time (instead of – as so often – shortcrust pastry) and, as a highlight, small snack carrots. The taste is not only pure to nibble. But they are also perfect in whole for the carrot quiche with puff pastry.
How to make the Carrot Quiche
First, prepare the carrots: Small snap carrots easy just wash; regular large carrots clean, peel, and cut into small pieces, sticks, or slices. Wash the spring onions. Cut off the dark green as well as the root. Cut spring onions in half or thirds. Sauté carrots in oil in a frying pan. About 10 minutes for whole snap carrots, slightly shorter for sticks or slices. Finally, add the scallions and sauté for 1-2 minutes. Season to taste with salt and pepper.
Now, preheat the oven to 400°F/200°C. Lightly grease a square tart pan (approx. 10x10 in / 25x25cm) or round quiche pan. After this, roll up the puff pastry, roll it out slightly if necessary, and place it in the form. Fold back the overhanging edge so that it is double. Press down the edge firmly. Whisk together eggs, cream cheese, and cream or sour cream for the glaze. If you like, add small cubes of feta. Season with salt and pepper. Spread the vegetables on the dough, and pour the glaze over them. Bake quiche for about 30 minutes until golden brown. Sprinkle with cress if desired. The quiche tastes delicious hot, lukewarm, and cold.
Top Tip
But of course, it's also regular large carrots. These should only be stalked or shaved before sautéing. By the way, the quick vegetarian quiche with puff pastry fits into a square and round tart molds.
