Such a herb pull apart bread is already a great invention: It tastes just stunning, and everyone can take it piece by piece without using a knife - perfect for parties or barbecues. Even baking it is a treat: my hearty pull apart bread with herb butter and cheese smells simply delicious 🙂.
If you don't know pull apart bread yet, you might have eaten it under a different name. Depending on which shape you choose, it's sometimes called monkey bread or bubble bread (in round shapes).
Ingredients
For my yeast and herb bread, I chose the ball version. The result is sort of little buns arranged close together. This makes each bite nice, fluffy, and moist. Use dry yeast and store-bought herb butter if you want to bake the bread quickly. If you have more time, prepare the savory bread with homemade herb butter and fresh yeast. Since all four of us love the yeast herb butter bread, this is also no problem 😉 .
How to make the Pull Apart Bread
Are you ready for this great side dish recipe? Well then, let's go! First of all, put all the ingredients for the dough in a large bowl and knead for 5-10 minutes. Cover and let rise in a warm place for about 45 minutes until the dough doubles in size.
Then, spread a round pizza tray, baking dish, or springform pan (about 11 in / 28 cm) with about 40 grams of herb butter. Briefly knead the dough again on a lightly floured work surface. After this, cut in half with a dough card or sharp knife, then cut the halves in half again, etc., so that you end up with about 26-30 small portions.
Shape each portion into a ball and place them side by side in the baking pan. Cover again and let rise for at least 20 minutes. Preheat oven to 360°F/180°C. Warm the remaining herb butter and carefully spread it with a brush. In the end, bake the bread for about 20 minutes, sprinkle with herbs and cheese, and bake for another 5-10 minutes.
Top Tip
Topping the herb pull apart bread with cheese is optional but definitely recommended. Including this step, the barbeque side dish tastes even better.

- 1 sachet dry yeast, 7 grams
- ½ teaspoon sugar
- 90 milliliters (6 tablespoons) water, lukewarm
- 160 milliliters (¾ cup) milk, lukewarm
- 1 ½ teaspoon salt
- 30 grams (0.1 cups) olive oil
- 1 teaspoon herbs, fresh and chopped
For spreading
- 140 grams (⅔ cup) herb butter
- 1 teaspoon herbs, fresh and chopped
- 70 grams (⅔ cup) grated cheese, optional
