For a reason, Grandma's nut cake is one of the most popular classics. It is wonderfully aromatic and moist. And it fits every occasion! On top of that, the moist nut cake is the perfect way to use leftover baking ingredients. Because it tastes just as good with hazelnuts as with walnuts or almonds. And with a bit of chocolate in the dough and as a glaze, it gets that special something.

Taste and Occasion
I could now claim that chocolate always lasts forever in our house, and that's why I'm often on the lookout for recipes in which you can use leftover chocolate. The reality is different. I have honestly never had to ask myself what to do with chocolate Santa Clauses or Easter bunnies 😉 . But my easy nut cake recipe can, of course, also be baked with extra purchased chocolate. The hazelnut cake is straightforward to recreate. The mixture of ground hazelnuts and chopped nuts gives it an exciting consistency.
Ingredients
The base of this recipe is a simple cake batter. Whether you want the nut cake with chocolate to be soft or crunchy, you can eliminate the chopped hazelnuts completely (and use 50 grams more ground nuts instead) or increase the proportion to a maximum of 100 grams. In this case, you will only need 150 grams of ground nuts. The chocolate leftovers can also be chopped rather coarsely or grated finely, depending on your taste.
How to make the Nut Cake with Chocolate
Start by preheating the oven to 350°F/175°C. Then, grease a loaf pan and dust with a little flour. Cream the soft butter with the sugar. Gradually stir in the eggs one at a time. Add the flour mixed with the baking powder to the bowl and stir in briefly with the pinch of salt. Then, alternately stir in the ground hazelnuts and the milk (you will need enough milk until the dough falls off the spoon with difficulty - so start with 1 tablespoon). Finally, fold in the chopped nuts and the chocolate chips.
After this, pour the dough into the prepared pan, smooth it out and bake for about an hour. Test with chopsticks. Let the cake cool, and then decorate it.
For the chocolate icing, melt the couverture or chocolate with oil in a hot water bath. Coat the cake with it and in the end, decorate it with nut brittle.
Top Tip
The chocolate nut cake tastes best with dark chocolate because it becomes a little less sweet. However, full-milk chocolate will undoubtedly find an excellent last destination in it as well 🙂 .

Ingredient substitutions
Variations
If it is to be a very easy nut cake, leave out the chocolate completely. Also delicious! Or you can use a mix of walnuts and hazelnuts. If you like, you can vary the recipe further and fold in some fruit, such as cherries or plums. The sugar-free alternative is also brilliant, as well as the vegan nut cake.
