Although I've developed a lot of healthier baking recipes, I often find myself starting almost from scratch again. I modified several alternatives of older creations for the low carb muffins with apples, such as these protein muffins and the low carb apple pie. Doughs with coconut flour, for example, did not convince me at all this time. And so, the low carb apple cinnamon muffins consist of a dough containing mainly ground almonds, some almond flour, and protein powder. In addition, there are eggs, milk and a sugar-free sweetener such as erythritol. The fact that the apple muffins are low carb, high protein and at the same time moist is due to the Greek yogurt and a minimum amount of almond paste. The result: really, really delicious! Even our kids were thrilled when they tested a piece 🙂 .
Of course, how healthy low carb apple muffins can be called is also a matter of definition and personal preference. But it certainly does not hurt to replace the classic now and then with such apple muffins without flour and sugar. Benefit: Unlike usual baking without carbohydrates, you don't need masses of eggs, butter, or oil for my recipe. This leads to comparatively low-calorie, low carb apple cinnamon muffins despite the almond paste.
How to make the Low Carb Apple Muffins
First of all, preheat the oven to 350°F/175°C. Beat the eggs with the erythritol for a few minutes. Stir in the yogurt until there are no lumps, then add the almond paste.
Now, wash and core the apple and cut it into small pieces with or without the peel. Weigh, mix with the lemon juice, and set aside. Mix almonds with almond flour, protein powder, baking powder, guar gum, and cinnamon. Add to the egg mixture alternating with the milk. Mix everything only briefly but vigorously. If the dough is substantial, add a little more milk if necessary.
Then, fold the apple pieces into the dough. Fill the dough into 6-8 (silicone) muffin cups. Mix erythritol and cinnamon and spread on top of muffins. Bake muffins for about 20-22 minutes. They will still be moist but should be baked through, of course.
Top Tip
The ingredient combination that I recommend in the recipe has brought me the best result. Changes, as always, at your own risk 😉 . Nevertheless, you will find a few exchange tips below for sugarfree, low carb apple muffins. Instead of almond paste and almonds, for example, hazelnuts and peanut butter are suitable. You can make the protein apple muffins with xylitol or erythritol; if you want them sweetened even more naturally, use coconut or whole cane sugar. I've made the low carb apple yogurt muffins with low fat Greek yogurt, Skyr, and soy curd.

For the dough
- 2 eggs, medium
- 45 grams (4 tablespoons) erythritol
- 80 grams (0.3 cups) low-fat Greek yogurt
- 25 grams (2.5 tablespoons) almond, or nut puree
- 80 grams (¾ cup) ground almonds, or nuts
- 20 grams (1.4 tablespoons) almond flour, or also almonds
- 40 grams (⅖ cup) vanilla protein powder
- 1 teaspoon baking powder
- ¼ teaspoon (⅓ teaspoon) guar gum
- ½ teaspoon (0.5 teaspoon) cinnamon
- 100 milliliters (7 tablespoons) milk, or also almonds

- 120 grams (1 cups) apple cleaned, weighed
- 1 teaspoon lemon juice

Notes
- Brown erythritol, xylitol, or a mixture of both are suitable for sweetening in addition to regular erythritol. Both have carbohydrates "on paper", but these cannot be utilized and are therefore not counted.
- The exact amount depends on personal taste and how heavily sweetened the protein powder is. It should be a multi-component protein powder like this, not a pure Whey. If you don't want protein powder, replace it with oat flour or almonds.
- The consistency may then change.
- If the almond paste is relatively solid, it is best to dissolve it in a small amount of warm milk and only then add it to the dough.
- The guar gum is optional but results in a little more binding in glutenfree pastry.
