The glutenfree, low carb garlic bread has a slightly different consistency than traditional bread. After all, for example, the entire all-purpose flour is replaced by almonds. And that's not easy to do 1:1. In this respect, the development of the low carb pull apart bread with herb butter honestly cost me a lot of nerves: from a liquid dough, which reminded me more of pancakes, to a kind of giant dry stones, I made the most diverse creations during experimenting 😉 …. But the end result is really excellent: a hearty low carb pull apart bread that also convinces "normal eaters"!
My glutenfree garlic pull apart bread has a special dough. I based it on the almond flour pizza, but that didn't work out well until the third step with a few changes. The foundation is ground almonds (in the form of regular and de-oiled ones) and mozzarella. The creamy cheese brings a pleasing flavor and a brilliant consistency.
How to make the Low Carb Pull Apart Bread
First of all, prepare the dough Therefore, cut the mozzarella ball into small cubes. Place in a small saucepan with the cream cheese and heat gently. Melt for about 5 minutes over medium heat, stirring in between. Now, preheat oven to 360°F/180°C. Grease a small pan (approx. 6 in / 16 cm). Alternatively, grease a small springform pan and place a small ovenproof glass, greased on the outside, upside down in the center for the "dip hole" in the middle.
It's time to combine almond flour, almonds, eggs, salt, baking powder, garlic, and herbs in a bowl. Add melted cheese and knead everything with a hand mixer. The dough will be pretty sticky and moist. Add another 1-2 tablespoons of almond flour if necessary.Transfer the dough to a baking mat dusted with Parmesan cheese, form it into a long snake, cut it in half, and keep cutting in half until you have about 20 mini portions.
Shape into small balls. If desired, layer these in the pan with some grated cheese, and spread with about half of the melted herb butter. Bake for about 13 minutes. In the end, spread with remaining herb butter, sprinkle with cheese if desired, and bake for another 5-10 minutes.
Top Tip
To form the rather sticky dough, it is recommended to sprinkle the work surface with ground almonds or (ingenious!!!) Parmesan. The low carb party bread without flour rises a little less but is much moister and for a longer time fresh than the normal. For extra pizzazz, add some herb butter as well as grated cheese. We also like to snack on my hearty glutenfree plucked bread with a dip or salad.

For the pizza dough
- 1 ball mozzarella, 125g, preferably buffalo mozzarella
- 30 grams (2 tablespoons) full-fat cream cheese
- 100 grams (1 cup) almond flour, de-oiled
- 100 grams (1 cup) coarse ground almonds

- ½ teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon Italian herbs
- 2 cloves garlic, pressed
To finish
- 30 grams (⅓ cup) parmesan, or mixed almonds
- 40 grams (3 tablespoons) herb butter, optional
- grated cheese, optional

Variations
Instead of baking the low carb plucked bread with herb butter as a wreath, which consists of small balls, loaf pans are also suitable. So it becomes a low carb folded bread or pull apart bread without flour. The quantities in my recipe result in a rather small bread. It is already quite lush, not really fluffy-light.
