I am excited about the low carb brownies. In addition to xylitol, which is obtained, for example, from Finnish beech wood, I used dark chocolate drops without sugar and de-oiled almond flour. Note: the latter is not the same as ground almonds! Compared to many other low carb recipes that have failed me on and off in the past, these low carb brownies are just so easy. Moist, luscious, awesome!
This makes the brownies without sugar and flour a delicious alternative to my other brownie recipes, like the sweet potato brownies, the cookie dough brownies or the traditional homemade brownies. There is xylitol in this low carb brownie recipe. This is a so-called "sugar alcohol", like erythritol, mannitol or sorbitol, even though it contains neither alcohol nor sugar.
You can also use the almost calorie-free erythritol products instead (although the pastry then partly gets a cool aftertaste). Xylitol, on the other hand, does have calories. But it tastes neither strange nor bitter as, for example, partly stevia. In addition, it has little effect on insulin levels.
How to make the Low Carb Brownies
Let's start with this easy low carb recipe. First of all, preheat the oven to 360°F/180°C and line a square baking pan (approx. 10*10 in / 25*25 cm) with baking paper. Beat the eggs with the xylitol for a few minutes, add the vanilla and salt. Now, melt the butter with 70 grams of chocolate drops in the microwave or a water bath.
In a second bowl, mix almond flour with all remaining ingredients. Mix into the egg cream alternately with the chocolate-butter mixture. The dough will be pretty firm, chewy and sticky. Then, pour the dough into a pan and flatten with your hands or a pastry scraper. Sprinkle remaining chocolate drops on top. Bake brownies for about 25 minutes. The dough can still be soft.
In the end, let your brownies cool and refrigerate for about an hour. There they will become harder and firmer.
Top Tip
Attention: For some animals like dogs, it is life-threatening. So please do not feed the low carb brownies with almond flour to your four-legged friends 😉 . They are way too delicious to pass on anyway.
