And appropriately stored, it becomes incredibly soft and moist… but more on that in the recipe. Now it's time to start baking! Get out your rye flour, honey, eggs, and butter 🙂. Let's go!
How to make the Gingerbread Men Cookies
First of all, heat honey, sugar and butter in a saucepan over medium heat and mix well. Caution: the mixture must not boil. Once everything is well mixed, let the mass cool down sufficiently. Now, mix in eggs, flour, baking soda and spice well until everything has become a smooth dough. Then, pack the dough in an airtight container and let it stand overnight at room temperature.
The next day, the dough can be rolled out (to about 0.2 in/ 5 mm) and any shapes cut out (e.g. gingerbread men). Bake the cut-out shapes at 360°F/ 180°C until the dough is lightly browned (very roughly 10-15 minutes). The finished and cooled gingerbread can then be decorated with egg white icing as desired.
For the egg white glaze, beat the egg whites with the sifted powdered sugar for a few minutes until peaks remain. If the glaze is still too thin, you can add more powdered sugar. You can color the icing with food coloring to taste. Use a piping bag to pipe the decorations onto the gingerbread. Have fun!
Top Tip
The finished gingerbread is relatively hard at the beginning. This is quite normal and should be so. It is best to pack them airtight (e.g. in a plastic box) and put apple slices in the box. The gingerbread is then allowed to draw and is supplied with moisture and thus becomes soft and moist. This can take from 1-2 days to a week. It is best to leave the gingerbread in this state until consumption. If they lie in the air again for longer, they will become firmer again. Important: The apples should be regularly checked and renewed so that no mold develops.
