For the easy homemade funfetti cake, I used my Fanta cake recipe as a base. While the latter is still enriched with sour cream and fruit, the funfetti cake remains more simple. And yet somehow more opulent: It gets many colorful sugar sprinkles on top.
If you like, you can even add some of the edible confetti to the dough. The result is then a funfetti cake, as known from the USA. But beware, not all sugar decorations are suitable for this. I'll give you tips on which sprinkles to use for confetti cakes further down in the post.
I'm posting this recipe now because I wanted to give you some inspiration for baking for carnival. It is a nice carnival recipe for kindergarten and school.
Ingredients
For the quick children's cake with colorful sprinkles, you need only a few ingredients. The most important thing is Fanta or any other kind of orange soda. The carbonic acid ensures a fluffy dough - but only if you don't stir too long. In less than 10 minutes, the confetti cake is in the oven.
It's hard to believe that there are even baking mixes for such a simple confetti cake recipe! Even with these, of course, you have to buy and add fresh ingredients like eggs and oil yourself. So it's really not worth it, is it?
In the most straightforward, quickest version, you coat the lime cake with powdered sugar icing. Add edible confetti and you're done. If you have more time, you can prepare (like I did for the pictures) a pudding buttercream. For this, it is best to cook the pudding before you prepare the sponge.
How to make the Easy Homemade Funfetti Cake
This easy funfetti cake is what dreams are made of. Let's dig in!
First of all, preheat the oven to 350°F/175°C and cover a baking sheet with baking paper. Then, beat the eggs with the sugar for a few minutes until light and fluffy.
Now, mix flour and baking powder and stir in alternately with the oil. Finally, stir in the lemonade only briefly so that the carbon dioxide does not escape.
Optionally, fold in sugar sprinkles or confetti. Spread the batter on the baking sheet. Bake the cake for about 20 to 25 minutes and then let it cool. Now it's time to get creative: Decorate your funfetti cake as desired. You can use icing or frosting and colorful sugar confetti or sprinkles – it's up to you!
Top Tip
For all those who want to bake the funfetti cake with colorful sprinkles in the dough - and not only for decoration - there's the following tip: Classic round nonpareils are usually not suitable, as they "run out". Relatively dry sugar decorations like this one remain more stable during baking. And provides a nice crunch effect when eating the soda cake at the kid's birthday party 🙂 .

- 400 grams (3 ⅓ cups) all-purpose flour
- 200 grams (1 cups) sugar
- 5 eggs, medium
- 150 milliliters (⅔ cups) sunflower oil
- 180 milliliters (¾ cups) orange soda
- 16 grams (1 ⅓ tablespoon) baking powder, 1 small bag
- Icing or frosting , see tip
- sugar sprinkles , for decorating and possibly in the dough

Ingredient substitutions
Variations
For the easiest and quickest version, frost the cake. Sift 200 grams of powdered sugar and mix with 3-4 tablespoons of orange soda or juice. Spread on the cake and decorate with sugar decorations.
Also delicious is a thin layer of custard buttercream. This variation can be seen in the pictures. Store coated cake in the refrigerator. Sprinkle sugar confetti just before serving.
Alternatively, you can use a cream cheese buttercream frosting or a variation of different cupcake frostings.
