These chocolate muffins may not be as fast as microwave cupcakes, but they’re in a different league: They’re real pastries, true little cakes that deserve the name. You make the chocolate muffins with oil instead of butter. The recipe is quick to make: mixing the ingredients together and preparing the batter takes no more than five minutes; then, the whole thing goes into the oven for 20 minutes. The melted dark chocolate in the batter, along with the cocoa powder, makes the chocolate muffins both moist and decadently chocolatey.
This recipe is also fantastic for baking with kids or for kids. Other than melting the chocolate, there are no complicated steps, making it a hit at any party!
How to Make the Chocolate Muffins with Oil
This is truly a quick and easy recipe. So, let’s get started: Melt the chocolate or chocolate coating and preheat the oven to 360°F/180°C. Mix the dry ingredients in a bowl: flour, cocoa, sugar, baking powder, and salt. Whisk the wet ingredients and add them to the dry ingredients. Mix briefly but thoroughly with the melted chocolate. Make sure not to over-mix, so the muffins stay tender!
Pour the batter into muffin tins and sprinkle with chocolate chips if desired. Bake the muffins for about 20-25 minutes. They should still be moist inside.
Top Tip
If you like, you can make them even richer. I often enhance the basic chocolate muffin recipe with extra chocolate chips. For an even more indulgent treat, you can add a frosting. This recipe makes 12 regular moist chocolate muffins or 8 “jumbo” ones 😉 if you use larger cupcake wrappers, as shown in the picture.

Ingredients
- 100 grams (⅔ cup) chocolate, or chocolate coating
- 260 grams (2 cups) all-purpose flour
- 30 grams (⅓ cup) baking cocoa
- 110 grams (⅔ cup) sugar
- 2 teaspoons baking powder
- 1 pinch salt
- 3 eggs, medium
- 130 mililiter (⅔ cup) oil
- 200 mililiter (⅘ cup) milk
Instructions
- Melt the chocolate or chocolate coating. Preheat the oven to 360°F (180°C).
- In a bowl, combine the dry ingredients: flour, cocoa, sugar, baking powder, and salt. In a separate bowl, whisk together the wet ingredients, then add them to the dry mixture. Briefly mix in the melted chocolate, stirring vigorously but avoiding over-mixing to keep the muffins tender!
- Pour the batter into muffin tins, sprinkling chocolate chips on top if desired. Bake the muffins for about 20-25 minutes until they are set but still moist in the center.
