A deliciously fluffy and moist eggnog cake may not be extravagant, but it's always sooo good! Anyway, with this easy eggnog cake recipe, you're guaranteed to please cake fans. It is one of the few baking recipes I know by heart - because it is so simple.
Taste and Occasion
Pure for drinking, we don't really like eggnog. So the only reason to buy it is that you can bake with eggnog (or use it for great Easter desserts). It tastes excellent with cake batter. By the way, you can add chocolate chips to the moist eggnog cake.
Ingredients
Classic eggnog cakes consist of equal parts of the main ingredients: Of eggnog, sunflower oil, flour (more precisely: cornstarch and flour), and powdered sugar, you need 250 grams or milliliters each. Even the number of eggs can be calculated according to the same principle: Since a medium egg weighs about 60 grams, four go into the dough. I've been baking grandma's eggnog ring cake this way for years. The only adjustment to the original: I usually use only 180 to 200 grams of powdered sugar. After all, the cake is already quite sweet and gets a sugar coating at the end. Either way, the eggnog cake with oil is a real treat. And it looks pretty, too. Just the thing for the next coffee party, right?
How to make the Eggnog Cake
At first, grease a cake pan (approx. 9.5 in / 24 cm), dust it with flour, and refrigerate. Then, preheat the oven to 350°F/175°C and beat the eggs with the powdered sugar for a few minutes until light and fluffy. Next, mix flour with baking powder and cornstarch. Stir the dry ingredients alternately with the oil and eggnog into the egg mixture briefly but vigorously until a smooth dough is formed. Pour dough into the pan.
Now it's time to bake your eggnog cake for about 50 minutes and test it with chopsticks. If the cake gets too dark: cover it after half the baking time. Let the cake cool in the pan for at least 15 minutes. Then carefully turn out, and let cool completely. For the glaze, sift the powdered sugar and stir with eggnog and milk to make a thick, smooth glaze. Frost the cake and decorate with chocolate shavings as desired.
Top Tip
Because the eggnog cake is quick to make, it's a delicious last-minute treat. You can vary the basic recipe with additional ingredients and toppings if you think the basic recipe is too dull. We like the eggnog cake best with frosting and chocolate shavings. For the frosting, I mix liqueur, milk, and powdered sugar into a very thick mixture.
