Taste and Occasion
Belgian waffles always hit the spot. Their consistency is easy: they have an airy, fluffy, moist interior - and are wonderfully crispy on the outside. The smell when they're in the waffle iron is lovely!
An evident characteristic of square Belgian waffles is that they have a particularly thick dough with a deep honeycomb pattern compared to the "German", classic heart-shaped waffles. According to Wikipedia, the original recipe for Belgian waffles does not exist because there are 2 alternatives: so-called Liège waffles made of yeast dough. As well as the probably better-known Brussels waffles made from sponge dough - the ones I'm also presenting to you here. The extra-thick waffles are made for a cozy winter afternoon. Soulfood deluxe! Since my easy recipe for baking powder is quick to make, you can even make the dessert last minute.
Ingredients
You usually have the ingredients at home: flour, butter, sugar, eggs, and milk. Unlike cake batter, this one is quite liquid and reminds me of pancake batter. For baking, you need a special waffle iron for Belgian waffles. Since you usually already have (too) many kitchen appliances at home that take up space, we have a combination device with waffle plates. In this, you can also grill sandwiches, burgers or vegetables.
The temperature should be high to make Belgian waffles crispy and soft. And what do you serve with them? Berries or banana slices, for example. For whom the whole thing is too low in calories 😉: serve a good portion of whipped cream, ice cream, chocolate sauce, butter, and syrup. Disappears everything nicely in the dough honeycombs….
How to make the Belgian Waffels
First things first: Melt the butter carefully and let it cool down a bit. Mix the flour and baking powder. Place the sugar, salt, eggs, and melted butter in a large bowl.
Gradually add the milk while stirring and mix everything with whisks or whisk attachments to form a smooth dough. It is much runnier than regular cake batter and reminds me of pancake batter. If you have time, you can let the dough rest for about 10-30 minutes, but you can do it without. Heat the waffle iron and grease lightly, e.g. with some baking spray. Put a few tablespoons of dough in each well (we have an iron with 2 waffle wells), close, and bake for 3-4 minutes, depending on the device and heat. Depending on the waffle iron size, the recipe yields around 8-12 large, thick waffles.
Top Tip
The dough must be smooth and without lumps. If necessary, blend briefly with a hand blender. The waffles taste best freshly baked but can also be super frozen or stored in a Tupperware for 1-2 days and easily again briefly bake in the toaster.

- 2 eggs, medium
- 450 milliliters (2 cups) milk

Actually, anything that pleases fits - as with all other waffle recipes. Starting from vegan waffles, low carb and yogurt waffles, to special alternatives like the eggnog waffles or winter waffles. Or – always perfect – the absolute basic waffles.
