How fortunate that it's actually apple season all year round! Nevertheless, these moist apple muffins with yogurt taste especially good in autumn and winter. The recipe is made for sudden sweet cravings: you actually always have the ingredients at home. And the apple muffins with yogurt are ready in a flash.
Ingredients
The dough is wonderfully fine and moist, the topping fruity, and the crowning glory is a light sugar-cinnamon crust. The quick apple muffins are based on my basic muffin recipe, so like this one, they are straightforward to modify. The main ingredients: Flour, sugar, egg, oil, and yogurt. It doesn't matter if you make them with buttermilk, curd, or yogurt: they will be fluffy and fabulous! Remember that the milk product is slightly acidic - and the baking soda as a leavening agent. In my alternative, the apple muffins are baked without butter but with oil, just like the chocolate muffins. Of course, the recipe also works with liquid butter. Whatever you have at home. Or what tastes better to you.
I am a big cinnamon lover. Accordingly, it is actually also apple cinnamon muffins with yogurt. The unique thing about the recipe is that the fruit is sprinkled with a bit of cinnamon sugar before baking. This gives the apple muffins a thin sugar crust. It looks the best thing - and tastes really great.
How to make the Apple Yogurt Muffins
Let's start by preheating the oven to 360°F/180°C. Now, mix all dry ingredients in a bowl: Flour, baking powder, baking soda, lemon zest, cinnamon, salt, and sugar. In a second bowl, whisk the liquid ingredients: eggs, oil, and yogurt. Add the liquid ingredients to the dry ones. Mix everything together briefly (!) but vigorously.
Then, peel and core the apples and cut them into wedges or cubes. Fill the dough into paper or silicone molds (about two-thirds full); placing these on a muffin tray is best. After this, spread apple pieces on top and press lightly into the dough. Mix sugar and cinnamon and sprinkle on top. Bake muffins for about 20 minutes and you're done!

- 250 grams (2 cups) all-purpose flour
